Brazilian Vatapá



Vatapá is a well-known and classic recipe of Brazilian cuisine originated in Bahia. Ingredients
Brazilian Vatapa
  • 1/4 cup coconut milk
  • 1/2 lime
  • 1/2 red pepper
  • 1/2 clove garlic
  • 1/2 tablespoons of oil
  • 1/4 cup roasted peanuts
  • 1/4 cup roasted cashews
  • 1 cup water
  • 1 clove garlic
  • 1/2 pound of frozen shrimp
  • 1/2 onion
  • 1 carrot
  • 1 cup torn pieces of white bread
  • Salt
  • Pepper

Instructions

  • For the Stock
    • To prepare the stock, combine the chopped onion, the chopped carrot and the garlic, in a large Dutch oven and let the mixture boil for a about 30 minutes.
    • Drain stock through a fine sieve into a bowl.

  • For the Soap
    • Soak the bread pieces with the coconut milk for 10 minutes and blending with the coconut milk until smooth.
    • Bring water to a boil, and then add salt, pepper, garlic and the juice of the lime.
    • Add to the mixture the shrimp and boil for about 10 minutes or until the shrimp will be pink.
    • Remove the shrimp and reserve the stock.
    • Blend the onion, pepper, and garlic.
    • Blend the peanuts and the cashews until finely ground.
    • Fry the onion until soft and golden, for about 3 minutes, then add the ground nuts until golden.
    • Add the ground nuts to the skillet and fry few minutes more, once this mixture is golden, add the bread crumb, coconut milk mixture and the stock.
    • Cook it few minutes approximately 5 then add shrimp to sauce.
    • Season with salt and pepper to taste and serve.
