Feijoada is a well-known recipe originated in the Northeastern of Portugal. Although, it is not easy to make it is widely prepared especially during the carnival. In this section you will learn how to prepare this delicious recipe.
- 1 (12 ounce) package dry black beans.
- 1 1/2 cups onion.
- 1/2 cup green onions.
- 1 clove garlic.
- 2 smoked ham hocks.
- 8 ounces diced ham.
- 1/2 pound thickly sliced bacon.
- 1 tablespoon olive oil.
- 2 bay leaves, crushed.
- 1/8 teaspoon ground coriander.
- Salt.
- Pepper.
- Heat the oil in a large pot, add 3/4 cup of chopped onion, green onions, and garlic, and cook them about 5 minutes.
- Pour in the beans and fill with enough water, cook half-covered over a low heat for about two hours.
- While beans are cooking, cut the ham and put it in a small pot with a bit of the chopped onion.
- Cover with enough water and simmer about 2 hours.
- Once this is done, drain and add to the beans.
- Out the ham, onions and bacon in a baking dish and bake about 30 minutes.
- Add the bacon and the ham with the beans.
- Season with bay leaves, coriander, salt and pepper to taste and serve.
